Green tea is made from tea leaves that have been steamed and heat-treated without fermentation to reduce the action of oxidative enzymes. There are several types of green tea, including Gyokuro, Sencha, and Matcha.
Types of Green Tea

Gyokuro
This tea is grown by blocking out the sunlight when two or three new buds begin to open. It has no astringency and is rich in flavor.

Sencha
The most popular type of green tea.

Matcha
The raw material for matcha, Tencha, is ground on a stone mortar.

Hojicha
This tea is made by roasting Sencha or bancha over high heat to bring out its aroma.
